Berry Oat Breakfast Bars
It might sound weird to be making a baked good with cottage cheese, but these turn out really tasty and moist, without a strange texture.
- 1 3/4 cups rolled oats
- 1 cup milk
- 1 cup cottage cheese
- 3 Tbsp brown sugar
- 1 egg
- 1 1/2 cups berries (see note)
- 2 Tbsp flax seed
Preheat oven to 375 and lightly grease a 9x9 cake pan.
Add the oats, milk, cottage cheese, and brown sugar to a large mixing bowl, and mix thoroughly.
Beat egg in a separate bowl and add to the oats mixture.
Add any berries you're using, along with flax seed, and mix gently.
Add mixture to greased cake pan, and, if you like, sprinkle a little extra sugar on top.
Bake for about 40 minutes, until top is just starting to brown.
Let cool before you remove from the pan. You can serve the bars warm or cool - they're good either way!
Note on the berries: I usually use frozen berries that I've saved in the freezer as a batch is getting a little past its prime. Blueberries and raspberries work best, but strawberries and blackberries will work here too.
Because there's cottage cheese involved here, I'd recommend storing these in the fridge.
If you or your significant other is breastfeeding, these are actually a great lactation aid too - the oats and the flax both help boost breastmilk production.
